Pea-shoots and Roasted Carrots Salad

Yield: 4 servings
1.5 oz pea-shoots (2 big trays of freshly grown)
4 carrots, peeled
1 onion
8 oz mushroom
A little bit of salt and pepper
3 tbsp oil
4 tbsp mayonnaise
1 tbsp vinegar (red wine or apple cider)
1/2 tbsp honey


  1. Preheat the oven to 400F
  2. Cut carrots and onion into slices
  3. Toss carrot, onion, mushroom, with salt, pepper and oil in a large baking pan
  4. Bake for 40 min (Stir after 30 min)
  5. Mix mayonnaise, vinegar and honey together, as dressing
  6. Mix pea-shoots, baked veggies and dressing in a large bowl
